Santorini Heart sits where its name says it does: in the centre of Fira, a few steps from the alleys, the shops and the rim of the caldera. Architect Foivos Stavridis arranged its 38 rooms and suites around a central pool, so the hotel turns inward, to a courtyard of white vaulted volumes planted with lemon trees, rosemary and jasmine. By day the life of the house gathers on that deck, where the loungers line up under SOLANTI umbrellas, SNUG pillow poufs wait beside the private plunge pools and the pool bar fills with ERNAK AL armchairs in the shade of the sails. Indoors the tone drops to earthy plaster and soft light, with a two-level lobby opening through a circular atrium onto the all-day restaurant and its wine cellar. A town hotel that keeps its calm at the busiest point of the island.
